Heard 3 on the roost. They went silent at fly down. I repositioned to a transitional ridge on our 95+ acre property. It has been logged and they tend to travel that way. Eventually one fired up, and had two hens. I could see him through the trees on an opposite hill. I repositioned a little, and got stuck out in the open and just had to freeze in some very, very thin brush. He strutted at 50-60 yards for 30 minutes. The hens eventually drug him toward me. I was frozen still, sitting practically in the open for a while. He eventually slowly got to 33 yards. It was a fun hunt and he was a great meal.

✅ Brined the thick part of the breasts for 48 hours
✅ injected with butter / chicken stock
✅ slow smoked on applewood

I don't think I will fry another one. This is the most tender version of wild Turkey I have prepared. I have done it with both my turkeys this year. And thinly sliced, it makes great sandwich meat the rest of the week!

Well done all the way around!

I've got a breast I'm going to brine, sous vide then smoke. I left the bone in too. Will be my first experiment with that method but yeah, smoked turkey is legit.
