It seems like a lot of people shoot 125gr broadheads out of the Xbows. Is there a noticeable difference between these and 100gr? I shoot 100gr hell razors and they are screaming fast, but I'm going to buy more today and was debating on 125's. opinions welcomed....

I always shot 100 gr but my Excalibur is more accurate with the 125's. I will sacrifice a little speed for accuracy.
Shoot whichever is more accurate in your bow.

I don't recall how I got started with 125s, but have stuck with them. Speed vs. mass.
The 125s have never failed to have full penetration and are pretty much spot on with the calibration in my Nikon scope.

Pretty much my thoughts.
This usually equates to the heavier heads.
Heavier heads (and arrows) will generally retain more of their initial velocity (say at 40 yards) because they're more dense (less air drag to volume). They are also less effected by cross-winds and unexpected wind gusts.

Have you noticed how many long-range rifle shooters tend to use heavier bullets? For similar reasons, many crossbow shooters have switched to 150gr heads.

I still shoot 100g,dont know many folks who shoot 125g & none that shoot 150g, no long range twanging here so 30y wouldn't make much difference in my set ups.

Don't know how much this helps you, but most of the people I know that shoot an xbow, especially those that have gotten one as package, tend to stick with what weight heads come with em. Most seem to use 100, with some at 125. The Excalibur ones seem to be sticking with the 150. Just like a bow, try some and see what results you get.
