Someone at work brought me a bunch of baby poblano peppers from her garden. I decided to stuff them. I made up some stuffing by mixing some rice, olive oil, and garlic in a pan and letting that heat up. I threw on some cumin, smoked paprika, parsley, and tomato paste then some chicken stock at the end. Once the rice was cooked I tossed in some chopped beef I had used for tacos. Whatever type of cheese I found in the fridge was shredded and tossed in. They fried up nicely in a beer batter. I wanted the batter a bit thick to suck up some of that pepper juice.
