Any good recipes? Tried it at local Mexican and really enjoyed it. Of course I've checked the Internet. Hoping someone has a tried and true recipe..will be using chuck roasts, not goat 🤣

It turned out good, but I would do a couple things different. Instead of cooking for a while, removing the meat to blend, then returning the meat to the liquid, just blend it from the start. Rehydrate the dried chilis in warm water beforehand. Also, the amount of lard called for was excessive. You could probably cut it in half and still have a nice fatty braising liquid.
 
Did it with venison a while back. Long process but worth it!!

I love birria, but a lot of the recipes I've seen don't generate the same consistency for the consommé broth as the taco stands.
 
I love me some birria! And the wife and daughter love anything Mexican. So I've made quite a bit. I really prefer beef to deer. But I did do some with venison roast and cooked it with some beef ribs and that made for a really good combination…not as good as beef chuck roast and beef short ribs though. This is pretty much my go to recipe but I play around and tweak at it…
Rather than simmering on the stove top, I put it in the oven to cook low and slow.
 
FYI, there's a taco truck in Cordova that offers a birria "pizza". It's great for my family of 5. Basically it's a 12" birria quesadilla, but they cut it into (8) slices and serve it with a big cup of the consommé broth & their salsas. And for $25, it's a much better deal than just (2) orders of tacos like they usually serve them.

Tried it Monday. Wife put together a reel on Fakebook but I'm not smart enough to share it. Cooked it down, shredded the meat, then dipped the tortillas through the sauce,threw them on the flattop and covered 1/2 in meat, cheese, onion and cilantro.flipped them into a taco and fried both sides. Worth every minute
