Busy day with the new smoker

I made my first brine yesterday and put a turkey breast and 4 chicken breast halves in it. I put them along with some ribs on the smoker after church today. This is only my 2nd smoking session and still learning. It turned out awesome. :super: We also made crock pot dressing, homemade mac & cheese, green beans from the garden, and stewed potatoes along with peanut butter fudge and brownies. It's been a busy day but oh my what a feast. I got a lot of pointers from reading on here on how to brine/smole and stole the pb fudge recipe that Forvols posted the other day.

sounds delicious. if you find yourself with not enough time to brine chickens(halves, quarters, thighs) a competition guy that used to own the bbq place in town told me how most do it at competitions. they smoke them in those throw away aluminum pans and cut up 1 stick of butter per pan with skins up. i only run smoke for an hour or 2 and then only heat until the thighs are almost 165, then take them out and dress them with sauce on the grill for a few minutes until the thighs are 165. gotta use tongs though because they will be so tender they can fall apart.
