Cooking bear meat

My BIL gave me a bear roast, some steaks and some ground. I have never had bear, and dont know where to start. Any suggestions. I know it has to be cooked well done to kill parasites.

Steaks are great when done in oven almost like a roast. Remove and cool to room temp.
Flour, Then pan fry like country fried steak.
Very good.
