Anybody got one? I like a chili with meat and beans but not into tomato, peppers or other chunks of stuff. If it cooks down then that's fine. Prefer hot chili like black pepper hot if that makes sense. I've never made a crock pot chili.

Hamburger or turkey preferably

I use Bushes chili magic but it calls for a can of tomatoes for each can of it. I add chipolata tomatoes and onions, red or yellow bell peppers, green have a bitter flavor some times, there are 2 versions, classic and Texas ,I do 2 Tex x 1 classic with 3 lbs ground meat, for hot dog chili I run it thru my blender and it comes out perfect ,not sure what you like but the 15oz of liquid for the tomatoes could be replaced with water or beef stock, classic is boring straight but Texas may be hot to some folks so a mix works well for most every body

I use Williams salt free chile seasoning and adjust the salt to my liking. Mix the chile seasoning with the meat and let it rest over night. I prefer a blend of lean beef and lean ground pork or extra lean ground beef and regular ground pork mixed about 3beef to 1pork. Brown the meat with onions and put that in the crock pot. Add a few mild peppers such as Anaheim during the browning too for a tiny bit more zip.

I only add 1 tiny can of tomato paste. I use beef stock as the base for my chili. I also use black beans. Preferably dried and soaked over night. Partially or fully cook them first in just water if you are going to add them to a slow cooker closer to the end of cooking.

Add extra cumin and salt to taste around 30min before its finished or when you add the beans.
