Deer heart Recipe

Hey guys I'm looking for a good recipe for cooking a deer's heart. I know several guys on here have cooked them before. Got a fresh heart ready to go. Post up some recipes. Thanks!
 
Sliced thin and pan fried hot and quick. Salt n pepper to taste. Very basic but gives you and idea on how the texture and taste is, then you can go from there.

Treat it like a flank steak. Butcher it, cut off top "fat cap" plus veins/arteries, butterfly it open, and trim out valves and "heartstring" nerves as you go along. For a large heart, you may want to slip a knife under and remove any large coronary arteries & veins.

Once it's a flat steak, salt & pepper it, let it sit for an hour, and high heat grill it for about 2 minutes per side. Good stuff

Boil until it's tender, then cut it into slices and put in a glass jar with a mixture of water, Red Wine Vinegar, and sugar. The mixture is up to your taste, if you want it sweeter or more tangy.

Great appetizer or snack while watching football.
 
As mentioned above, clean it real good until it is thin steak and set aside. Saute some onion, green and jalapeno peppers and mushrooms in a skillet. When they are to your liking, add the heart. cook for just a couple minutes and then add the mixture to a tortilla. Heart tacos anyone?!?!??!
