Detailed "How to" make deer pepperoni -video post

This is a video "how-to" (start to finish) covering spices, casing selection and prep, operation of the equipment, ringing, cooking in residential oven, sanitation and safety tips (recipe at the end). The only thing I skipped in this one was the de-boning and grinding of the pork butts I added to the venison.

It was made to encourage persons to try home making of sausages for the first time. The ballpark hotdog may be an American icon but being triple ground � do you really know what you are feeding your family? Think about it, home sausage making is easy and rewarding knowing you control the ingredients and handling of the meat. Making your own deer sausage can really save processing costs.

Hmm... I don't know. Sometimes grinders feed too fast - you can try it if you have a stuffing plate and tube. My guess would be if the grinder worked OK as a stuffer they'd have parts available via the manufacturer or even ship with them. Sometimes that's a sign. You could call and ask if they reccomended it for stuffing. My old #10 stuffs OK on the big tubes - not so good on the 1/2 and 3/8 sizes.

If not Northern Tool 5# vertical stuffer - $80 (the one I use most now) isn't too expensive.

I don't know why I didn't think to mention, You can always test your unit with beef or pork ahead of season. See how it works before the harvest.

[color:#FF0000](I edited the recipes on all the videos to reflect a lower beginning cure level with option to increase the salt load w/cheap salt. Doing that messes up the old links) [/color]
 
Thanks for your detailed step by step videos. With the help of my better half I am hoping we can try some of your recipes.

I do try to maintain them and to do that it requires, basically, deleting the old and replacing with the new. That sometimes buggers up links to them. So if there are any that don't work you can find the quote "latest" one by going to www.youtube.com/rldel149. I'm off and on here in spurts so PM if there is anything you/he needs. I don't know much but I'll help if I can.

What got me started was a basic burn-out on deer tacos, spag.. etc.
