Pan seared oven roasted duck that soaked in salt and brown sugar brine for 3 days. A wine and apricot sauce over a bed of wild rice with spinach and a good bottle wine

 
Yum! Hoping to get a few ducks for the freezer soon.

1/4 c of kosher salt

1 bay leaf
Herbs

Let boil for 5 mins then let cool completely before pouring over ducks
 
Ain't worth eating :) If soaking it in buttermilk for 24hrs and then frying it in bacon grease can't make it taste good, it's not edible ;)
