Gonna try an eggplant.
Got any relatively simple carb free recipes for it ?

I like to cut them about 1/4" thick, drizzle with olive oil and add a little smoked paprika then grill until done.

grilled. olive oil, thyme, pepper and salt to finish works well. eggplant parmesan is relatively carb free. eggplant moussaka without the potatoes and cheese sauce instead of the classic bechamel.

or just plain fried like green tomatoes. if you fry them, you need to sprinkle the slices with salt for 20 minutes then rinse and pat dry. although, i always do this no matter how i cook them as it removes the bitterness as well.

Eggplant parm stackers are a great dish and it is an easy portion size. Not a carb free dish. wife does this:

Slice the eggplant in rounds about 1/2 thick. Use a flour, egg, panko coating adding garlic powder to the flour and fry in olive oil till brown. I let the eggplant drain on a wire cookie rack and I do them in batches. DO NOT CROWD THE PAN!!! Use 3 slices per stack, eggplant then a tomato sauce, I use Silver Palate but just whatever you prefer. Add parm then mozzarella and then the next slice, using the same process and ending with the cheese on top. Bake at 375 for about 20 mins or until the cheese is melty like you like it. I can get about 5 stacks out of a medium/large eggplant.

I'm not sure how my grandmother made them, but she would cut them like thick french fries, and fry them just like french fries.. delicious !
