Field dress after kill?

Killed a bird today. Temp on truck read 81'. From time killto feezer was only 2 hours. Didn't seem to be a problem smelled fine and bird was keep in shade till cut up. Does anyone field dress? I not a big turkey hunter and this is the hottest day I have ever killed one.
 
I do sometimes. On days when it's really hot and I'm a long ways from the car, I'll go ahead and fieldress it. I'll also carry it out instead of shoving it in my vest where it'll stay hot.

I havent field dressed a bird since the very first few that I ever killed and that was over 100 birds ago. IMHO the only part of em thats fit to eat is the breast and and its not going to matter a couple hours on that. Ive tried to eat those trotters and unless you make dumplings or stew out of them, they are too tough to chew. ANybody that wants drumsticks and thighs let me know. I will save em for you next year. Its too late for this year.
 
They don't start to rot right after you shoot them. Their cells are still alive for a while, until rigor mortis fully sets in later on. Then the time starts counting against you...but I've had a few hours between kill and fridge and no problems.

As with any tough cut such as shanks, short ribs etc from any animal, wild or domestic, all you have to do is braise them.

Tell me your recipe. I've tried to make the legs edible a bunch of different ways and I can't do it.

I end up gnawing on them for awhile.

I don't know how poser does them but I just boil them with an onion, salt and pepper, and sometimes carrots and celery. Boil a few hours till meat falls off the bone and then pull the meat and shred by hand like BBQ. Throw in a skillet with butter and add your favorite BBQ sauce and heat it up. Makes good sandwiches
