Ground Jerky

I like the Hi mountain kits. Great instructions for ground, whole muscle and making snack sticks all in one package. I did not like their mandarin seasoning kit. Cajun, Hickory, Inferno, Sweet and spicy, Japaleno, cracked pepper all came out great. I make it using a jerky cannon for flat strips and round ones(kind of like a slim jim with no casing)

except I do not use the preservative. And I marinate 24 hours, plenty of worchestershire sauce (Lea & Perrins), some pepper not much. Last year we went through nearly 3 deer as jerky and all I have left is a teeny package of about 6 pieces.
 
I usually use Hi Mountain but recently tried LEM Backwoods Mesquite jerky seasoning. It was really good and not near as salty as Hi Mountain.
