We ate one at deer camp a couple days ago and I have to say it was one the best meals I've ever had! If you've never tried it, you should. Recipe was a layer of veggies in the bottom of a Dutch oven, cut up groundhog covered with another layer of veggies and then two cans of Dr Pepper roasted for four hours. Man it was good!
 
ive ate a couple that my grandmother cooked. they were greasy but they were big groundhogs. i imagine a small one would be pretty good.

I imagine all the veggies soaked up the grease. This one wasn't greasy at all. I could've fed it to anyone and they wouldn't know they weren't eating roast beef.
 
yeah that makes sense and yall cut yalls up. she just roated it whole in the oven with salt, pepper, and sage. i dont remember her trimming any fat off either.

she used to cook possum too, that pawpaw killed off the worm beds. i didnt care for possum at all.
