Help me cook my turkey bird

Killed him last Spring, plucked, wrapped and froze. I'm up for anything really but really wanting to do something unique with it. After I defrost him I can quarter it or cook whole, so sky is the limit.

More I think about it, quartering this bad boy up and making a few different dishes sounds more appealing. Smoked thighs, carnitas...gotta be creative with the breast though[emoji848]

I have done turkey breast cut fried and whole smoked. You got the whole bird...rub it down in olive oil and spices, stuff with onion celery carrots salt pepper and apple and orange. SMOKE FOR 2 hours then bag and take to oven until Internal temp of 175. Use drippings in the bag to make a gravy, slice and dice turkey. Serve with home made stuffing, mashed taters, corn, rolls, gravy,mac n cheese and cole slaw...oh and green beans.

Or just strip meat and fry it up in flour salt black pepper and make gravy after frying and serve over biscuits and some fried taters. Still also add sides of green beans mac n cheese cole slaw

ETA: cooked greens would also go great with either cook method above.
