I've been using this sauce from Hank Shaw's site for a few weeks and I've become addicted. The only thing his recipe calls for that I don't do is adding sliced jalapeños at the end. It's 3 Tbsp hot sauce, 3 Tbsp honey, and about 3 to 5 chopped cloves of garlic. Heat it all up in a pan and toss it on stuff. His recipe was for snipe but I fried up half a wild turkey breast and it was great. Nothing fancy but pretty to look at.


 
If you have a Korean or Asian market nearby look for Korean pepper paste. Its called gochujang. Try it instead of the jalapenos or even the hot sauce. You will need a little vinegar if excluding the hot sauce though. Gochujang is usually sorta mild but some are pretty zippy.
