If the target is about 30 yards away, but down hill from you, what do you do? I have herd put a 25 yard pin, and I have herd the opposite.

It depends on the steepness of the hill. You will definitely shoot higher on a downhill target if you shoot what it ranges. You should also remember to bend at the waist as you shoot downhill. Poor form probably gives a worse result than the yardage judging.
 
Bend at the waist and don't worry about it. If you just drop your arm and continue to stand erect you will shoot high. Bend at the waist and you will hit just right.
 
form is key. but i have found it also depends on the fps the bow is shooting in those tweener yardage. i shot a 5 pin sight and for a 25 yard shot i hold it between my 20 and 30 yard pin. i suggest just shooting those down hill and up hill shots also if you hunt out of a tree stand try to find a place to shoot out of those and how it hits then.
 
It definitely depends on the angle of the shot/how steep the hill is. If your 18yds higher than the target and the target is 30yds away then I would just hold the 30yd pin on what you want to hit. However, if that hill is 35ft high and you're shooting at 30yds then putting the 25yd pin on where you want to hit would give a slightly better result than using the 30yd pin. Like others have said, correct form is crucial when shooting steep angled shots up or downhill, but what you are doing when you are shooting angled shots is compensating for the difference in how gravity affects an arrow and it's "drop" considering how you have "compensated" for it on level ground already with your sight.
