And Red Stripe! Flew all the way to Jamaica to get the real deal last week. Also had some braised pork belly and some braised whole fish, these will be my next cooking experiment as they were delicious.

Anyone braised fish or pork belly?

I braise pork belly. I always boil it first for 10 minutes in just water. That gets rid of some of the funk.

This one is Japanese style chasu.

This one is boiled then fried a little crispy before the braising.

Mixed with the sofrito (peppers/onions/little tomato/spices) before adding the liquid.

You know, now im gunna have to try it with jerk seasoning too. I use it more for Asian and Latino type dishes like black bean soup/stew. Sounds great for jerk too.

BTW, leave the skin on. Cooked right it just melts when you eat it.
