Took jerkey out to thaw Friday night. Maraninade all day sat, then put in the dehydrator for 10hrs on Sunday... It was dry, tough and delicious. I grab a bag Wednesday and theres mold..what did I do wrong? This is the second batch that has molded after a few days or week.. please help. Thanks.
 
did you let the jerky cool down before putting it in a bag? If not the heat will create moisture in the bag and that will allow it to mold easily. I put mine in small baggies and freeze what i'm not going to eat in the next few days. then when it is gone lay another bag out to thaw and it lasts a lot longer
 
After the dehydrator is finished the jerky sits in a fancy ceramic pie plate, one of the ones with a fancy lid, for several days-often a week. After that it goes into a burp-able plastic container and then in to the pantry.

No white mold. Jerky almost never makes it to the pantry. My kids love it.
