Jerky mold

I had to throw a bunch of Jerky away today for mold. It actually looked like powdered sugar. It's less than 2 weeks old and I've kept it longer in the past with no problems. It was stored in cheap baggies. Anyone else ran into this problem? Any pointers for keeping it fresh longer.
 
I've seen it do that. My suggestion would be to freeze it in smaller bags and just get out a bag once in a while when you feel the need.
I don't have that problem because I have to hide it from the kids and give them small portions at a time to make it last a week.

Mold happens when jerky is not dry enough or when moisture gets inside. Ever see those small bags inside the commercial jerky? Those are to fight moisture.
 
I vac seal jerky in 4oz and 8oz portions. Then put in the freezer. When opened put in fridge but dont close off the bag (traps moisture if you close the plastic bag). You can also put it in a paper bag in the fridge. You can also spray potassium sorbate on the jerky it will not affect the taste but will stop any mold issues. Even commercial jerky will mold if left long enough and exposed to moisture.
 
Mine sets on the counter for awhile to reach room temp and looks dry, then goes into the fridge in a zip lock but like Forvols mentioned I never seal the bag completely up, always leave it open so it doesn't trap moisture.
