Legs/Thighs - recipe recommendations?

I have a confession. In the past I have breasted birds out, but not kept the legs and thighs. Not proud of it. Seeing the error of my ways, I have a pair of legs and thighs in the crockpot right now. My plan is to slow cook them and shred the meat, but I haven't decided exactly what to make then. Fajitas seem like a good option. So does chicken salad, sans chicken add turkey. What's your favorite option?
 
For about half, I debone them raw and grind them with the breasts for Turkey burgers.

Some get smoked first, then shredded and slow cooked as gumbo.

I plan on making fajitas out of Ethans dark meat tomorrow.

Way too much good meat to throw away for sure.

Boil in salt water until you can easily separate all the spindles and bone. I hit mine with a meat mallet a few times then alt, pepper, flour, and fry. Tastes about like rabbit...real good.
 
1. Boil in stock pot with onion, celery and carrot. At least 3-4 hours till meat falls off the bone. You get shredded/pulled turkey and you get a whole pot of stock for other uses. I throw the pulled meat in a skillet with butter and bbq sauce and make sandwiches.

2. Rub with salt and pepper. Smoke on the smoker till the wood burns out, then wrap it tightly in aluminum foil and let it slow cook for several hours till the meat falls off the bone. Makes even better BBQ sandwiches.

The first method would be good for carnitas or other Mexican type food that uses slow cooked shredded meat.

I wouldn't use it for fajitas, I use the breast for fajitas.

I smoke the legs then add to a pot of white beans or turnip greens.

A long braise will do absolute wonders. Just keep in mind the legs are full of tendons so when you shred/pull the meat make sure to get each one.

After you've separated the meat get you some lard and fry the meat slightly crispy. Use any traditional carnita recipe and you will be amazed.

Made carnitas tonight. They were incredible. Had several people over (not people who are typically wild game eaters, including women and children) and a whole pan got devoured. Cannot believe I've been throwing this meat out for 16 years. One turkey yields a lot more dark meat than I realized. And it's fantastic.
