Yeah, I figured I had to share that pic. I knew y'all would get a kick out it. :D

After the meat is pulled apart it's the absolute best beef you can put on a taco in my opinion. also cooked cheek meat with it, too. It was fantastic.

My next project is beef tongue in sous vide.

I can't say that looks good. Tongue never looks good while cooking. But, I know what the end product tastes like and it's been awhile since I've had it. It looks like I'm headed down to the Taco Truck for lunch today.

I've one here at home in sous vide that's been in 14 hours. I'm hoping it's even better. I'll take some pics of finished product and report good or bad. I also have four lbs of cheek meat in. I split it up to let one bag go 24 hours and one bag 48.

I never cared much for the texture. Great beef flavor, but too squishy for my taste
 
I ate beef tongue in Japan.....wasn't that bad.....maybe compared to the other stuff i had eaten but none the less it tasted like beef just strange textured....
 
Buddy ate at the concord truck today after I told him it was good,he liked it but said the red sauce was red for a reason :lol: ,it the tongue had been skinned before cooking it might have gone over better but I would pass on that but would try if the grass grabber was gone off of it :roll: :D
