Made some Kielbasa and Pepperoni

I made 6.5lbs of kielbasa and 6.5lbs of smoked pepperoni suasges. Used Waltons signature smoked kielbasa seasoning and LEM pepperoni seasoning(plus some red pepper lakes). Kielbasa was stuffed in a hog casing I havent used any in a while so they were ugly sausages, but held together and great flavor. Pepperoni stuffed in a non-edible casings.. Very pleased with how both came out, vac sealed and in the freezer.

Thanks, you enjoy that stuffer. Keep the canister really cold. Prior to loading up throw it and stuffing tube in the freezer for about 30min. I usually do that while I am mixing up the sausage for stuffing. Get some food safe silicone spray and use it before stuffing and after clean up before putting the stuffer away. Also, nice doing business with you.
 
My favorite sausage was the garlic Kielbasa recipe in Ruhlman/Polcyn's Charcuterie book. It was fantastic. I need to pull some meat from the freezer and do it again soon
