Here we have pumpkin pancakes, maple sausage, and apple smoked bacon.

Not pictured is the surgeon who will have to do some angioplasty work on me in the near future.

Pumpkin pancakes...just add canned pumpkin to a batter? It looks and sounds delicious!

Oops. I meant to post the recipe.

1 1/4 cups all-purpose flour
1 egg
1 1/4 cups buttermilk
1/4 cup white sugar
1 teaspoon baking powder
1 teaspoon baking soda
1/4 cup vegetable oil
1/2 jar Dickinson's Pumpkin Butter

I have another pumpkin pancake recipe that is more complicated. It's good but I usually skip it and make this one.

If you can't find the pumpkin butter, which should be around the jam/jelly section in the store, you can add in...oh...1/4 cup of canned pumpkin and some pumpkin pie spice. I go a little heavy on the cinnamon, but that's just me.

looks yummy! forget the surgeon, looks like a daily dose of fruit, veg and protein to me :)

Them pumpkin pancakes would look better laying next to some
fried deer tenderloin slices...But now that is interesting
bout the pumpkin butter...I got a pumpkin that I'm gonna
prepare what is called a harvest stew, in...Yep, gonna hollow
it out and serve a deer venison / beefstew like stew, out of
it....Makes a great novelty dinner and the pumpkin lends just
a tinsy to the flavor............................BH51......

I've done that before. It is indeed good.

I've also got a great, nay, amazing recipe for a real pumpkin soup. When I make it I'll post the recipe and a picture. It's really, really good.

We accidentally bought pie pumpkins when we thought we were buying mini jack-o-lantern pumpkins. (I thought they looked too nice.) So I'd be interested in the soup recipe.
