So this afternoon I tried this recipe with wild turkey breast and it turned out great.

8oz button mushrooms sliced
Purple onion

Sautee the above to add on top of the Turkey during 30 minute cook.

6 slices of bacon...cooked to a crispy crumble to add on top later.

Recipe is good for one 1.5lb turkey breast.

One wild turkey breast
(I cut mine in half top to bottom and then cut the bottom third of to make 4 pieces.

I did brine the 2 breast and feather meats 24 hrs using a 1/2 cup kosher salt 1/2 cup brown sugar with thyme and whole black peppercorn....

after 24 hrs brined I rinsed and prep meat....

.I rubbed the breast down with Tony's creole. Throw breast in ziploc of olive oil. Throw on grill for 4-5 min per side at 400*(pic 1)

Brown the breast

Then placed browned breast in a ziploc bag containing your honey mustard sauce. Shake well then transfer to a grill compatible pan to prep for finished cook. (Pic 2)

Add your sauteed vegetables on top then close the lid grill is at 400.

At 15 minutes smother in Monterey jack shredded cheese, finish cook.

Once done add the real bacon crumbles on top.(pic 3)

That's that... turkey was great!



The sauce:
1/2 cup of honey
1/2 cup of Dijon mustard
1/4 cup Dukes Mayo
2 tbsp of dried minced onions
