Kind of. Wife ordered this at a small Mexican restaurant a while back and loved it. When I got home I started checking recipes out and seems they didn't line up with the dish she got. We went to another spot and she ordered it again there and it came out same as previous spot. We used what we had to recreate the restaurants versions for something pretty quick and easy tonight with some of the last of our poblano peppers. I will use the remaining poblanos for making the sauce on a later date.

We cut peppers into rings and sautéed them with some mushrooms, made some rice, and heated up some queso with fresh hot garden salsa. Grilled the chicken breasts and called it good!

One of my favorites is stuffed jalapenos. Wife finds some large ones and makes them every so often. Superbowl Sunday she makes her own hot wings, stuffed jalapenos, her own salsa with tostitos, and we watch a good movie from the past.
 
Mexican place by the house makes a mean Pollo Chipotle, and they grill up entire chipotle peppers. They actually wind up with almost a BBQ taste to them and are not nearly as hot. Good stuff.

The Mexicans I work around grill the pepper to sloth off the peel the roll in flour, dredge in egg, finish cooking then use for various things

how you make the cheese sauce?

that cheese they have at mexican restaurants, is that white American cheese?

i bought some of that white mexican cheese and it tasted like crap.
