My first attempt turned out pretty good.
I used the same rub as when I grill steaks and it was a little too salty for me on the outside but wow it was some kind of good!!!!
8 1/4 pounds of meat & bone
Seasoned with salt, pepper, garlic powder, onion powder and Tony's.
Rubbed and wrapped in plastic wrap and left it in the fridge over night.
Started it at 425 for 30 minutes then 325 for about 2 1/2 hours then let it rest about 45 min.
Took it out of the oven at 130 degrees internal.
Pretty much turned out perfectly.

Boiled some taters cut them in half then put cheese & bacon bits on top of them.

I think I would like that way better.
Everyone there just can't get past the color enough to try it and find out how good it is.

That is EXCELLENT. And agree---I got a whole dang family(and extended) they see pink and some red ..its like I aint eating that raw unsafe meat...dumbfounds me when we have a family dinner at a nice steak house and 10 of us...they get 8 orders of 20+ dollar steaks at well done and we need A1 and Heinz 57 sauce with our meal. except for me and BIL. I get mine rare to med rare at most..add some salt and black pepper. Sop up the drippings with one them nice steakhouse rolls.
 
Wow, that looks good, foil wrap those taters and throw em in the oven the last hour or so, or better yet rub em in olive oil and salt and eat peel and all, yum!

Normally that is how we cook our taters.
I rub them with butter (real butter) and sprinkle with kosher salt, wrap and toss in the oven, LOVE them!!!
Guess we should have just put them in there even though the temp was lower than normal.
 
Looks really good! I keep seeing people use this recipe it one similar: 1 cup of softened butter, 7 minced garlic cloves, 2 tablespoon fresh rosemary minced, 2 tablespoon fresh thyme minced, 2 tablespoons salt, 1 tablespoon black pepper. They look and sound so good That's how I'm gonna do the next one.
