I processed most of my remaining venison into sausage and burger meat. None of my recipes are anything crazy good that blows you away so I was wondering if anyone could share some recipes that blow you out of the water everytime you eat them.
Bearded Butchers on Youtube have the best recipe I've ever had. The powdered smoke and encapsulated citric acid are the major players that set it apart. Use any spice mix you want so long as you include the right amount of powdered smoke and encapsulated citric acid. The A.C. Legg pre-packed spice mixes they recommend are awesome. Easier than mixing your own.
