Root beer chops

ROOT BEER PORKCHOPS

Ingredients:

(2) tbsp olive oil
(4) boneless pork chops
(3) bottles root beer (12oz.)
Sea salt & freshly ground black pepper
(1) cup beef stock
(2) tbsp brown sugar
(1/2) tsp chipotle chili pepper
(2) tsp Worcestershire sauce


1) Marinate pork chops by pouring (2) bottles of root beer over them. Refrigerate them for (2 � 4) hours. Take them out and season to taste with sea salt freshly ground black pepper.

2) In a pot or large skillet, combine the last bottle of root beer, the beef stock, brown sugar, chipotle pepper, and Worcestershire sauce. Simmer until this reduces down by 50 � 75% over medium heat. Remove and set aside.

3) Heat a large skillet on med/high heat; add the oil and then the pork chops. Cook for around 3-minutes per side. Then reduce the heat to med/low, and cook until tender.

4) Remove meat onto a plate and cover with root beer sauce.
 
A variation you could try...take 1/2 of a red onion (or vidalia) and dice it up fine. Then go to step (2) - add a little olive oil and cook onion until translucent. After that just continue on with the recipe.

It adds a nice flavor.
 
fish - it is a sweeter dish than I prefer, the wife and kids like it though. The reduction of the root beer helps intensify things...Basically, it is a play on how some people cook pork with apples, which of course have plenty of natural sugars in them.

Personally, I prefer chops with onions and garlic... :)
