Whole fry, skin it ,gut it ,de-head it bread it and fry. There's a lot of flavor in the bones. And the meat just slides off the bones!!
I'm embarrassed... as intended, I assume, the post title distracted me and at first I TOTALLY missed the the best/worst thing about the picture. I was about to offer a serious answer to the question when I finally saw "it."
