Smoked Gator

I've only ever had it fried. I like it. It must be in the preparation from start to finish. Like venison. Needs proper care from kill to table.

Now what I haven't had is turtle. I'm really wanting to try that.
 
Well he smoked one. The tail was very good. Rest i didn't care for. He said next time he might just get the tail or some filets
