Threw this together for dinner tonight. Really good. Next time, I will sautee the onions first and maybe fry the bacon.
2 lbs ground deer
3 cups Quaker oats
4 strips bacon
3 tbs Worcester
1 tbs garlic powder
3 large eggs
1 small sweet onion
Chop bacon and onion to small bits. Mix all uniformly and form a loaf. Make tray of foil to fit with short sides to allow maximum smoke contact. Place in smoker at 225. I prefer hickory but, any lite flavor wood is suitable. Cook to 160 and place sauce of choice on top and continue cooking to 165. About 3.5-4 hrs. Allow to rest 5 minutes and serve.
