1 Tbsp. olive oil

2 tsp. mesquite seasoning

4 skinless, boneless chicken breasts

8 oz. pkg. shredded Mexican cheese

1/4 cup mayo

1/3 cup bacon bits (about 5 slices cooked and crumbled)

1/3 cup sliced green onions

1 1/2 tsp. hot sauce or Tabasco


Pre-heat oven to 400 degrees

Place a sheet of aluminum foil in bottom of baking dish and pour in olive oil


Season breast with mesquite seasoning and place in dish


Blend cheese, bacon bits, onions, mayo, and hot sauce. Spread evenly over chicken. Bake about 16 minutes (or when chicken reaches 165 degrees) and turn oven off. Let set in oven for an additional 2 minutes. Turn on broiler until topping is golden (2-3 minutes)


Tried this for the first time a couple of days ago and it's good!
