I know this is a stupid question but do people eat sting rays?
Thought about it after looking at a bow fishing page.
Never thought about it till now.

Yes, you cut off the "wings" and they are the meat that you eat. We catch and keep butterfly and cow nose rays for shark bait, tigers and hammers love them

I have eaten a few sting ray wings. I will say it's pretty dang good! Need a sharp knife because the skin is tough.
The texture is different. Not bad, just different. I just blackened them.

I have heard for years that they use them to make scallops. The way to supposedly tell is that the stingray scallops are perfectly round because of the cookie cutter used.

If you have eaten a lot of scallops over the years, you have eaten stingray.... It is commonly shut and used - Faked as scallops

Never ate one but use them for shark bait

BBQ stingray is a popular dish in parts of Southeast Asia. As others have mentioned, they use the wings. I had it several times in Singapore when I was in the Navy. It was very good. It is typically served with a chili sauce.
