I've been looking up recipes but don't like what I find.

I want to know how to make the dough because that is where my baking skill fades pretty fast.

This is what we used on this one.

2 cups bread flour a little more if needed
2 cups 00 flour
1 tbsp kosher salt
2 tsp active dry yeast
1 2/3 cups warm water 115 degrees F
2 tsp honey
2 tbsp extra-virgin olive oil
Nonstick spray to greasing the bowl

Combine the bread flour, 00 flour, salt and yeast in a mixer with the hook attachment. Whisk the the water and honey. Turn it to medium speed and slowly add the honey-water mixture and olive oil. The dough will come together when a ball gets formed and pulls away cleanly from the sides of a mixing bowl. If the dough is too wet just add a little more flour until it pulls away cleanly. Grease the inside of a large deep bowl with cooking spray. Add the dough to the bowl and cover with plastic. Put it in a warm area until the dough doubles in size(usually takes a hour sometimes a little bit longer)

I hope this helps, let me know if you need to know anything else!!
