Taters and cactus

For years I have seen a jar of "pickled cactus" at Kroger, called Nopalitos. I looked around on the Internet and found a simple recipe. Then I decided that I would try them.
I simplified the (already simple) recipe. Here's what I used:
1 3lb bag of Diced Potatoes O'Brian
1 32oz jar of Dona Maria brand "Nopalitos"
1 pouch of frozen chopped onion
1 can Rotel tomatoes
Salt and pepper

I used a 5qt deep high-walled frying pan and pan fried the potatoes for about 10 mins in light vegetable oil under medium heat.
Then I added the jar of Nopalitos (after draining and rinsing in a colander). Then added the Rotel and the chopped onion.
Cover the contents, and stir often under medium heat. Salt and pepper to taste, and serve.

The cactus is very tender and has a pretty neutral flavor. They kind of look like green beans, but they have been been stored with onion and jabanero in the jar, so they have a mild spice undertone to them.
I'm not disappointed in the results, but it's nothing to write home about. (Then again, I didn't go out of my way to make this a gourmet dish, either!)

Anyone got any Noaplito recipes?
 
Never had a need to try it. The only stuff I've ever consciously eaten with cactus in it is a dish called "guisado" at a little Mexican place in Charlotte. From what I recall, you'd never know you were eating anything but bell peppers in that on, either.
 
Never had that but brotherinlaw takes the fresh and peels then makes thin strips wrap a peice with a large shrimp wrapped in bacon and grill.not bad at all and think its more of a texture you add instead of a flavor if that makes sense
