Every year I smoke up Christmas gifts. It's good and cheap, two things I enjoy. I typically do it with pork belly, but the places I get those have begun to become really proud of them so I went with a butt this year. Ten days in a brown sugar and cracked pepper cure, four hours of apple and pecan smoke, then sliced thick.






 
Call the folks at Home Place Pastures. I've gotten whole, skin-on bellies on the regular from them for about $4/lb. Their farm raises heritage breed Berkshires. The meat is beyond spectacular
