I dug a wood duck out of the freezer when the gumbo craving hit this morning. I remember this one. Shot him on the water at about 15 yards when he swam to my call.

I made the roux with the duck's fat and used the carcass to make the liquid. I browned some homemade andouille and seared the duck meat in the pork fat before adding it into the pot. I wish I had thrown in another duck and doubled it. I forgot to take a picture of the obscenely buttered garlic bread.
