Tough old rooster?

Roosters got old enough to start causing a ruckus so we put 6 in the cooler.
Smoked one tonight. Flavor was very good but TOUGH!!!

Any suggestions on how to tenderize older chickens ?
 
+1 on the brine. plus you need to cook it slow, maybe in a crock pot(if you want smoke then smoke 2 hrs). the legs and thigh will still be tough as nails if you cook too fast even after a brine.

you can always do like mamaw and use a pressure cooker too, then you can grill it, make dumplings, chicken salad, pot pie.
 
Thanks! Ill try a couple on the next bunch. Wife canned the rest after chewing on the tough rooster :-D
 
I would either pressure cook or sous vide after brining. I appreciate the flavor, and to a certain point texture, of older range birds. They're actually popular around here due to the ethnic diversity. A place I used to take broilers to used to specialize in them.

Old folks always said you have to pressure cook the roosters and drown em in dumplings. Yum!
