I make it every year about this time. One of the first indicators of Fall. It's a freezer cleaner. Everything goes in. Pork, venison, beef...whatever. Nothing fancy. Garlic powder, onion powder, pepper, salt, red pepper flakes, and hickory smoke. I use it in everything. Makes a great dinner sandwich, it's good sliced and tossed into tomato sauce for spaghetti, excellent in a pot of beans, and just good on a cracker. I had a handful left after stuffing and even made a few meatballs.

 
I bet it was good!

Mine goes into boudin. Everything from pork jowls, deer livers/kidneys, chicken gizzards/hearts, beef cheek, leftover brisket, I think there's some rice in there somewhere. :D

I need to up my kill total...the past couple years I've not had to do a "freezer clean out". It's been more of a conservation effort to see how long I can stretch it out.
