Salmon seasoned with salt and pepper and a topping of butter, fresh dill, the zest & juice from one lemon and garlic cloves. Topped with another lemon sliced.

It was "ok" but leaned towards the bland side.
Dunno if I did something wrong or that's just what it is.
I would probably do it again but the wife couldn't stand it lol

Re: Tried some salmon

Probably could have used an onion plus basil, thyme and oregano for more flavor. You can add a little white wine as well.

Re: Tried some salmon

Your only supposed to cook salmon until the fat starts oozing out the side. What you have there is over cooked and there's no flavor left.

Re: Tried some salmon

Looks over-seasoned to me. Fish should not need that much help.

Re: Tried some salmon

Interesting, thanks guys.
Never thought about it being over cooked, I just went by the recipe.
Doubt I could have handled it any less done though. Cooked it on 400 for 15 minutes and the center wasn't done in my opinion.

Dunno, might try it in a restaurant again to compare the taste.

My first try at salmon I was trying to cook it until it was done (change colors like meat does) salmon won't do that. Once it "flakes" it's done.

Re: Tried some salmon

Next time, use your favorite BBQ rub seasoning sprinkled all over one piece and see what you think. I had a gentlemen that cooked the professional BBQ circuit give me that tip years ago and it was delicious, just like he said. My wife loved it.

Good advice above about overcooking salmon, you definitely do not want to do that.

Re: Tried some salmon

Salmon is best cooked very little-just enough to avoid the raw. Get close to it and remove from heat and let set for about 5 minutes. I bake it till near done then broil to crust the top.

My Wife hates it that way.....says its raw....Only spice I use when cooking is that Bay stuff...tried dozens of combinations.....shrimp with orange slices (tip of hat to Chaneylake) was so good I tried it with not bad success on the salmon......The farm raised salmon is a fair piece of taste south of wild caught.

Re: Tried some salmon

If you can buy the wild-caught sockeye, it's a far superior fish in flavor and texture. The farmed pink Atlantic has become such a garbage fish that there's no flavor left in them anyway, and most of them have to be fed dyed food to get the pink color.

If you do the same thing to sockeye, you might change your tune. Your seasoning profile is perfect for salmon. Try making a lemon/garlic/dill mayo to use as a topping sauce. I don't mean a jar of Dukes, I mean blend an egg yolk with some "light-tasting" olive oil, a little salt, and a garlic clove. Talk about GOOD.

Re: Tried some salmon

Best salmon recipe ive ever had - place salmon on foil lined pan and pat the top with a paper towel. Then squeeze fresh lemon juice and pat again. Them drizzle melted butter. Then sprinkle salt pepper red lobster seafood seasoning and dill. Then dollop blue plate mayo and spread it all over the filet- bake at 350 until it flakes with a fork

Re: Tried some salmon

My go-to salmon recipe is cedar plank on a grill.
Rinse filet and pat dry
Salt and pepper
Make a slurry of dijon mustard and brown sugar, cover top of filet, but not too much
Cook towards rear of grill until almost done
then move the plank over direct flame until the plank starts to smoke and catch fire (adds a little smoke flavor)

Re: Tried some salmon

Last week I saw where Publix had wild caught sockeye salmon. That's the only time i've ever bought it and it goes on the grill, not the oven.

Re: Tried some salmon

I like my salmon just plain with a little salt and pepper.
