Done some scouting and talkin to my family that has a farm. They have the turkeys patterns down pretty well, so will be heading their way this weekend.

If I happen to kill, how can I make a fan mount with his beard and spurs as well?

Search YouTube on how to make a turkey fan mount. I could explain it but it would take a while and I'm on an iPhone. YouTube can tell you how to do just about anything. Basically you cut off the fan and trim all the excess meat from the base and work lots of salt or borax into the base and pin the fan to a board in the shape you like (fanned out) and let dry for a week or 2.
