Needing some tried n true recipes for the running gear !! Only tried them once, slow cooked on the smoker, tougher than boot leather ! Thinkn bout crock pot cooked all day ?
Throw some ideas my way.
 
cut the meat off. wash and soak in water with some salt over night.

take it out the next day, re-wash it, clean off the trim. Cut in strips or nuggets. Salt, pepper, garlic, any other seasonings you want. Add flour and stir fry them ham-hocks!
 
I take the turkey legs and thighs and marinate them in a dry rub (garlic, Jamaican jerk, salt pepper) overnight and then throw them in the slow cooker with bbq sauce, a little water, 1 can of crushed pineapple and 1tbsp of more jerk seasoning and let those suckers cook on low for at least 10 hours. I then make a black bean dish that is red onions, garlic, black beans and cut pineapples and put that on top of a bed of jasmine rice and then the "Jamaican turkey" on top on the black beans and it is pretty good. You'll be amazed at all of the bamboo-type of tendons after the meat renders down.
 
Boil them with some onions until the meat falls off the bone, at least an hour or two. Pull all meat off, careful to remove all spindle. Add butter and your favorite BBQ sauce and make sandwiches. Very good and easy.

Yep�close to how I do mine. I put mine in the pressure cooker with several onions, chicken stock and lots of red pepper flakes. When its done we pull it like pork and dredge in homemade BBQ sauce on a toasted bun. Save the broth too�it makes a heck of a soup base!

yes I forgot to add that, save the broth for soup.
