I've had a gobbler strutting with two hens on my farm every day this week. I'm guessing this means their first nests failed and they are trying again?

Not necessarily. Could be several things. Two young hens that didn't nest, could have lost thier first or second nesting attempt, and also turkeys just being turkeys in the spring and summer. They still breed even though it isn't turkey season

Idk, over the last several years I have noticed turkeys acting completely different than what Im used to. Fall and winter gobbling has gotten intense imo.

I heard on a handful of different occasions last year turkeys gobbling 50+ times in the dead of winter. Seemed a bit intense to me...?
