Just finished up the process of making a 25lb batch of venison bacon. I used the Bearded Butcher bacon kit. It turned out a little sweeter than I really like but it's good. Wife really likes it so that's a plus.
I did it last year, it was Ok; I didn't like it enough to do it again this year. Bearded Butchers on youtube have a great video on how to do it. I'd describe it more like venison spam that is alot meatierHmm. A new one on me. Like jerky?
