Wahoo Tacos

My neighbor gave us some fresh caught wahoo so we had wahoo two nights in a row. Last night was wahoo tacos. Grilled the wahoo after marinading it in butter and lemon juice for about 10 minutes pepper and a little Cavendars. Took sliced sweet peppers and celery and marinated them in lemon juice and pepper for a few hours. Mixed blue cheese with Greek yougart for a spread in the bottom of flour tortillas. Cut up a romaine heart for the base of the taco and sprinkled some more blue cheese on top of the fish and peppers. It was pretty good.

Wahoo is some great fish. I was fortunate enough to receive a gift of some from Jon54 a couple years ago. It was incredible
 
Wahoo is one extremely fine tasting fish. And they have teeth and they fight like crazy.

Never had one last long enough to fix like you did. They cook FAST.
 
The key to wahoo is to not over cook it. My favorite is grouper and caught a nice one in September. 88#. If there's a better tasting fish, I've not seen it.

Wahoo is my favorite pelagic fish by a lot! It's phenomenal.

Jon54, That carbo is a nice one! I normally wouldn't eat them when the get that big due to ciguatera. Where were you fishing?

Your tacos look great! I could eat that 3 nights a week and never get tired of it.
