Clean the entire bird to deep fry/roast? Fillet the breast off each side and take the legs? I usually clean 2 whole bodies to deep fry, then just cut the breast out of a couple and give the legs to elderly cousin of mine who is 83. She loves frying the leg to eat.
 
Filet off both sides of the breast, take meat place on smoker with apple as my wood. Cook at 225 for 2 hours, remove and eat.

IMO the flavor of wild turkey is too good to ruin with batter or marinades.

It's one of the few wild meats that's better to me with nothing but a little natural smoke flavor.

There's nothing more wretched to me than a marinade soaked grilled turkey strip.
 
Breast out only. Cut into chunks.

A little Dales marinade for a few hours.

Then skewer with onions and mushrooms and grill em up. Serve with baked potato.

Just finished cooking and eating this morning's bird. Wife and girls love it and won't let me fix it any other way.
 
Usually cut legs and breast off, but also usually pluck out one bird from each season (spring and fall) to cook whole. Today, the smoked turkey was the best way I have cooked a whole bird so far. Definitely the most tender and succulent of all the wild turkeys I have cooked.
 
breast only. throw in crock pot for a couple hours in water, then drain, add a couple cans of cream of mushroom and some mixed vegetables and serve over biscuits. AND I have found that the wild turkey breast makes AWESOME jerky with a sweet & spicy cure!
 
Poser, why do you pluck the bird if you just go and cut out the breast and legs? I only pluck when I'm going to cook the whole bird.
