Just depends on what I'm in the mood for. For the most part, it's really simple stuff, as I'm cooking for myself. I do a lot of grilled or pan fried (with just a little butter, no batter) chicken and fish. I find myself using a lot of Cajun or Italian type seasonings, along with some Mexican (mostly chipotle) seasonings.
During the winter, I will make more chili and gumbo.
I hate to say it, but I am burned out on Mexican...the family goes out for Mexican every Friday.
