Both of my boys have their lifetime hunting licenses. One is 13 and the other is 11. For deer season, other than an accompanying adult, can they hunt from the beginning of the regular season thru the end? They don't have to wait until the specified youth sportsman date for their first hunt of the year correct?

You are correct, as long as they are hunting with the correct weapon in its designated season.

I think hunter saftey is required for 10+ yr olds
I failed to put that in one of my previous posts…they both have taken the hunter safety course as well.
They are good to go and enjoy the hunting season.
Just my 2 cent: if they want to leave, just do it and don't make them stay. They are young and sitting still is not in there natural
