2" thick pork chops

Looks great,been picking a few up like that at UGO and throwing on the pellet grill/smoker
 
I keep reading about these. I think Ruger is a fan of thick pork chops. Do yall just call the local butcher and ask him to slice them thick for you?

Also as a newbie, brining is the same as marinating, correct?

Costco and Sams both sell packs of these boneless thick loin chops. Or ask your butcher to cut them for you.
Marinating imparts flavor. Brining with a salt/sugar solution causes the meat to suck in moisture. It makes an amazing difference for meat that tends to dry out when cooking.
 
I had a buddy that brought some 2.5 inch chops to my house a few weeks ago. First time ever eating thick chops, they are fantastic. One of my favorites now.
